Make it Do or Do Without Dip

A cheesy dip for when you need to encourage Wheat Thin consumption or when you're just in the mood for a really good snack.

Ingredients
  

  • 1 8 oz. Cream cheese, softened
  • 3/4 cup Mayonnaise
  • 1 cup Cheddar cheese, grated
  • 1 cup Swiss cheese, grated
  • 1/3 cup Real bacon bits
  • 1/4 cup Dried chives
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon Cayenne pepper

Instructions
 

  • Mix this all together in a plastic container with a lid (mine was a deli meat container that Brent sent leftovers in home with us).
  • It is best if you let is sit a day so those dried chives have time to rehydrate a little and the bacon bits of soften up and flavor the rest.  Dad said he liked it better after a couple of days.  

Notes

About a week ago, I realized I had several boxes of Wheat Thins.  Dad will munch on them; so when at Costco I will buy a box not realizing I had a box (or two) at home.  Plain Wheat Thins are okay, but Dad was complaining that they were a little boring.  I remembered I had seen a recipe online from Rhee Drummond (Pioneer Woman) for what she called a Million Dollar Dip.  I located it and looked at it and then looked out the window at the snow and bitterly cold weather and decided there was no way I was going to the store for the ingredients I was missing.  So, I decided to make the recipe with what ingredients I had and see how it went.  Some type of dip was better than no dip.  The dip turned out really good and so this my version.  I will include the original version for someone who has a better stocked pantry than me.
Heidi stopped by and I had her taste it.  She really liked it and requested it for our Super Bowl Sunday dinner.  Noah had already requested the Little Smokies in the chili sauce and grape jelly mixture.
