
Sauerkraut Casserole
A casserole Grandma Julia "Fern" Hess used to make for her family.
Ingredients
- 1 #1 can sauerkraut (Approx. 10 oz.)
- 1/2 cup mayonnaise
- 1 can cream of mushroom soup
- 1 pkg. hot dogs (optional)
- 4 cups cooked potatoes, diced
- buttered bread crumbs
Instructions
- Pre-heat oven to 350 degrees.
- Mix soup and mayonnaise in a small bowl and set aside.
- Slightly rinse sauerkraut, drain, and put in a medium-sized bowl. Slice hot dogs and add to sauerkraut. Mix in one-half of the soup/mayo mixture and spoon contents of bowl into the bottom of a greased casserole dish.
- Mix potatoes into the remaining soup/mayo mixture and spread over the hot dog layer. Stir slightly to combine.
- Top with bread crumbs.
- Bake for 1 hour or until done.
