Diana’s Delight

An old family favorite inherited from “Grandma” Carol Eves, a dear friend from our days in So. Cal. We changed the name at some point in the past upon learning that the old name (“Wetback’s Delight”) was not exactly politically correct. Oops.

Ingredients
  

Meat Sauce

  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 can tomato paste
  • 3 cans water
  • 1 t. salt
  • 1 t. chili powder
  • 1 t. oregano
  • 2 t. cumin
  • 2 T. sugar
  • 1 cup rice, cooked
  • 1 can kidney beans or pinto beans, optional

Toppings

  • 1 bag Fritos
  • lettuce, shredded
  • tomatoes, diced
  • olives, sliced
  • cheese, grated
  • green onions, diced
  • avocados, diced
  • sour cream
  • salsa

Instructions
 

Meat Sauce

  • Brown ground beef, onion, and garlic in a large sauce pan.
  • Add remaining "meat sauce" ingredients and simmer for 40 minutes.

Toppings

  • While meat sauce is cooking, prepare toppings.

Serving

  • To serve, place Fritos on a plate or bowl and top with meat sauce and remaining ingredients.
